Since being in Brisbane, so far away from Mexico, Marina has longed for the authentic flavours of her home country. She noticed that it was very hard to find (near impossible) anything that comes close to the flavour and freshness she cherishes from her home cooking. This fuelled her to share her passion for Mexican food in a market stall, using fresh, local ingredients.
Marina’s dream? to open a small Mexican restaurant where the people can dine in or even purchase ingredients to make her food at home.
You can find Flavours of Mexico every Sunday at Northey Street City Farm Organic Markets, where Marina serves her tasty handmade tacos. Lovers of authentic Mexican cuisine have delighted, and newcomers to the ‘real deal’ are finding the flavours intriguing when compared to your average bean, melted cheese and guacamole fare. Marina’s biggest challenge will be to convert the mainstream to these authentic, true flavours of Mexico. However, we’re sure that it won’t be too long before the whole city takes the leap. So sure, in fact, that we invited her to cook her food at Wandering Cooks every Wednesday evening!
